WUB-Hawaii Taste of Okinawa Menu
Though separated by thousands of miles of ocean, the islands of Hawaii and Okinawa are connected by the life stories of the Issei pioneers. Leaving their homes for a mysterious, unknown destination, they brought with them their music, their language, their dance ... and their recipes. In Hawaii they found that the staple foods of rice, pork, taro, and fish were similar to those they ate in Okinawa. Housewives made use of these ingredients to prepare their daily meals. And since Okinawans were always throwing parties and inviting their friends over, people of other ethnicities living in Hawaii came to appreciate the great family cooking of Okinawa. "A Taste of Okinawa" provides an opportunity to sample delicious Okinawan food prepared under the supervision of visiting ches from Jimmy's -- Okinawa's favorite family-style restaurant. The focus is on home-style cooking using local ingredients readily available in Okinawa or Hawaii -- Island pork, fish and chicken, kabocha, sweet potato and bittermelon, tofu, peanuts and miso -- and of course an ample supply of awamori, the delicious traditional distilled spirit of the Ryukyus.
